Jordanian

Nabali

produces a stable and aromatic oil.

Nabali superior

also known as Rasi'i, is a dual purpose variety producing very good quality oil.

Souri

produces a high content oil of excellent quality.

Qanabisi

fantastic claims can be made on behalf of the oil produced from this variety. It has an aroma suggestive of honey. It is localized to the area of Ajloun where Majdal is located and to the area around Jerusalem. The tree, however, has an upward habit and the fruit is difficult to pick; and it has a strong tendency towards alternate bearing, which only proves that, in nature, there is an inverse relationship between quality and quantity.

Italian

Frantoio

one of the main varieties at Majdal. This variety comes from Tuscany. It is well known for the fruitiness of its excellent oil which yields a peppery aftertaste and is stable.

Leccino

another Tuscan variety. It has excellent oil and is sweeter than Frantoio.

Coratina

There are a small number of olive trees of this variety. The oil yield is high and the oil has a very high polypheral content.

Ascolana

an excellent Italian variety which is used exclusively for table olives.

Taggiasca

this variety which is just coming into production produces late-season sweet oil.

Cerignola

also known as "grossa di Spagna". It is used mainly as a table olive but it is sometimes mixed with other varieties at the time of pressing.

Note: Most of the olive oil in Majdal which comes from Italian varieties is from Frantoio and Leccino.

Kalamata

also known as kalamon. A very famous table olive mainly known for Greek-style black olives. It nevertheless produces excellent olive oil.

Koroneiki

from the Peloponnesus in Greece. It has a small fruit with a high yield of oil that is rated very highly. The oil has a high content of oleic acid and very high stability.

Note: Only a few trees of these two Greek varieties are in full production at Majdal.
