Quality

The owners have made a conscious decision to opt for quality rather than quantity thus, for example, they have concentrated on planting superior varieties even if those varieties have a tendency towards alternate-bearing and are difficult to pick. Additionally, most varieties are grafted onto wild olive trees, notwithstanding that they grow very slowly. This was done as an extra guarantee against the need to fertilize or use pesticides since varieties grafted onto wild trees have greater resistance to drought and pests.

Following the tradition of diversification by importing well-known cultivars to supplement local varieties, the owners have in recent years planted the following varieties Kalamata and Koroneiki from Greece, Arbequina and Empltre from Spain, Tanche from France and Taggiasca from Italy. This should not suggest that local Jordanian varieties such as Qanabisi and Souri are not excellent, on the contrary, great claims can be made on their behalf without fear of contradiction, however, the existance of so many excellant varieties opens very interesting possibilities for the production of complex olive oil.
