Agriculture practices
Generally speaking, Jordan is an arid country. This fact has had a restricting impact on the cultivation of olive trees and a direct effect upon the practices employed in such an activity. Within the Northern and Western parts of Jordan however, a number of factors have combined to make the production of superior olive oil ideal.
Firstly, the area, which is mountainous receives a large amount of winter and spring rain, on which the cultivation of olive trees depends.
Secondly, terracing and careful water-harvesting techniques are employed to retain as much rain as possible. In exceptionally hot summers two supplementary irrigations from an artesian well in Majdal estate are m
ade, however, for all practical purposes the olive trees are rain-fed.
Thirdly, altitude, lack of humidity and the absence of summer rain all mean that the Mediterranean fruit fly and other pests do not pose any real problem.
In addition the fruits are pressed the same day thus producing oil with a fantastic bouquet and character and at the same time incredibly low acidity level (e.g., in 2005 the acidity was measured as low as ,011%).
These factors in themselves are responsible for the character and aroma which distinguishes Majdal Oil.
